One of my favourite Greek inspired dishes which can be eaten with or without chicken! So it's perfect for vegetarians but also a fantastic and easy recipe for chicken thighs or breasts!

Believe it or not I'm actually not a massive pea fan. But this dish really disguises them in a way that they simply compliment the rest of the dish so well! Stewed tomatoes, soft boiled potatoes & succulent slow cooked chicken are the stars of the show. Bizeli is a heart-warming traditional Greek dish which more people need to get to know about! Ingredients:
2 cubed chicken breasts/4 small chicken thighs (optional)
1 large onion thinly diced
2 tablespoons of olive oil
2 potatoes cubed into quarters
1 tablespoon of tomato paste
1 chicken stock cube (dissolved in 1 cup of water)
Half a small tin of tomatoes (100g)
1 1/2 mug of peas (more/less if you want)
2 bay leaves
1/2 teaspoon of cinnamon
Generous amount of salt and pepper
Serve with plain rice or bulgar wheat.
Method:
Dice your onion, and fry in a pan of heated olive oil. (Medium heat & keep stirring)
Add your big cubes of chicken breast/thigh and fry over until lightly coloured.
Now add your cut up potatoes and give everything a good stir so that the oil and onions cover everything.
Add your tablespoon of tomato paste and coat the contents of pan.
Now turn heat down to simmer and add your tinned tomatoes, bay leaves, cinnamon, and salt and pepper!
Dissolve your chicken stock in one cup of water and add to pan so the pan is 3/4 of the way full (don't cover food with water completely, you can add later if it needs more)
Now add your peas, you can add as many or little as you like but I'd say at least one cup full!
Leave the pan on a simmer and cook for an hour with the lid on.
Let it sit for 10 minutes before serving, and don't forget to make your rice to go with while it's simmering!
