This one dish two-hour recipe is perfect for lazy Sundays. Melt in your mouth chicken and potatoes with a Greek twist.

One of the best heart-warming Greek inspired dishes. I tend to make this at least once a month on a Sunday when I have a few hours spare in the afternoon! It's so simple to prepare but does require two hours cooking time, but it's SOOOO worth it once you finally take it out of the oven. Traditionally Greeks tend to use lamb which you can replace the chicken with if you like! But chicken tends to be a winner with the majority. Enjoy ❤
Ingredients:
Chicken legs + thighs (Skin on)
1 large onion chopped largely
Handful of cherry tomatoes or 4 tomatoes (chopped into quarters)
Salt & Pepper
1 chicken stock cube (dissolved in 3/4 cup of water)
Olive oil (Much healthier & flavoursome than sunflower & vegetable oil)
5 potatoes (Cyprus ones if you can get your hands on them!)
3 bay leaves
1/2 teaspoon of cinnamon
Foil to cover the dish with
Method:
Pre-heat your oven to 190 degrees. Get a nice big tray!
Add all of your ingredients to the tray, chicken pieces, potatoes, chopped up (Fresh) tomatoes, scatter your onions and then drizzle a good glug of your olive oil and all your herbs and seasoning.
Mix everything together so the oil coats everything, and then add your 3/4 cup of dissolved stock. How much stock you need really depends on how much you're cooking. Just make sure you don't put too much as you need it to all be soaked up at the end cooking. (So no more than 1/4 of the tray)
Cover tightly with foil, and add to oven! Cook for 1 hour with the foil on.
Take out after 1 hour, remove foil and turn potatoes ect around. Put tray back in oven for a further hour, until all juices are thickened and most soaked up, and everything is golden.
Take out of oven, and let cool for 10 mins! Then DIG IN! Serve with Greek yoghurt and salad - DEEEEEELICIOUS!
